It’s no secret that I’m not particularly proud to be American, but I’m a United States-based food writer, which means certain editorial choices are influenced by certain American holidays. (That’s capitalism, baby.) This Sunday is Independence Day, a day often celebrated with the consumption of “flag cakes,” along with other red, white, and blue desserts.

I’m not going to turn on my oven on July 4th, but even my clerk-hardened heart is a little enchanted by a themed dessert, and it just happens that two of my favorite fruits – blueberries and cherries – fit into the Christmas color scheme. Top it off with some white whipped cream and you have a deconstructed flag dessert, if not a full flag cake.

The format of this treat is simple: layer cherry pie pieces with whipped cream and blueberries in a pretty glass, then eat with a spoon. You can also use blueberry pie and fresh cherries if you want to change it up a little. Use a store-bought cake; A homemade cake is too precious to crumble.

The whipped cream can be freshly whipped or from a can, or you can dig into the entire American theme and grab a can of Cool Whip. The quiet holiday week ahead could see fireworks in store for investors if the Federal Reserve releases its deliberations on its bond purchase program.

Stocks could drift in the four-day trading week after hitting new highs last week. The closely watched 10-year Treasury yield has stayed below 1.5%, a positive reading for tech companies that outperformed, up 3.2% for the week.

Aside from Tuesday’s ISM services data, there are very few economic reports. But the Fed’s minutes of its last meeting will be released on Wednesday afternoon, and the market could learn more of the central bank’s behind-the-scenes discussions about the abolition of its quantitative easing program.

“Our baseline is that rates are drifting up, but to get that spike you need a catalyst to get there,” said Brian Daingerfield, head of G10 FX Strategy Americas at NatWest Markets. “Either the Fed has to be aggressive on tapering, or you really have to get the data going, and neither have you.”

Friday’s report that 850,000 jobs were created in June was better than expected. However, the unemployment rate fell short of expectations after rising 0.1 percentage points to 5.9%. Economists expected a decline to 5.6%. The report was not seen as strong enough to encourage the Fed to pull away from its loose policy sooner. The low interest rate environment has been the catalyst for robust equity market gains since the Fed did everything it could to help the economy cope with the pandemic. The $ 120 billion cut in monthly bond purchases would be the first undoing of these extraordinary measures.

“We don’t know much about the Fed thinking about tapering,” Daingerfield said. He said the most important information is when the program is due to start, how soon the program is due to end, and how it decides to break down its current monthly purchases of $ 80 billion in government bonds and $ 40 billion in mortgage securities.

Steven Wieting, chief investment strategist at Citi Private Bank, said the time has come for investors to move from popular cyclical trading to technology and growth stocks as the economy peaks.

“We see all of this as a temporary period of massive distortion, and in a year we will be on calmer waters,” he said. “I think this gives people, including us, a reason to move from just cyclical rebound trades to some sustainable growth opportunities.”

In the year to date, cyclical stocks have been among the better performers. Energy stocks are up 44.5% with the rebound in oil prices, and financials are up 25.2%. In contrast, the S&P 500’s growth stocks are up 14.3%, slightly behind the S&P 500’s profit of 15.5%. Tech stocks are only up 14.9% since the start of the year.

One area Wieting likes now is global health care. The S&P 500 healthcare sector grew 12.5% ​​year-to-date.

“Healthcare is outperforming mid-cycle. Healthcare is a part of the economy that hasn’t fallen as much, ”he said. “Profits and sales have grown moderately every year since the mid-1980s.” He said the sector has lagged the S&P 500 by 10 percentage points since late 2019 and has a cheap valuation. Big pharma stocks are among the best dividend payers.

Wieting said a particularly attractive area is cybersecurity, where demand is strong as a “major technology spend,” but the sector has gone nowhere.

For example, the iShares Cybersecurity and Tech ETF IHAK is just below its 52-week high from January, and the Global X Cybersecurity ETF BUG is trading about a dollar below its February high.

Wieting said he likes some alternative energy names and companies involved in digitization, including fintech.

He expects the stock market to move higher overall, but not at the same quick clip.

“We want to start moving portfolios away from pure rebound games … We are preparing for the move because we know we have outperformed cyclically over the past year. It made people enjoyable to invest in stocks when we could show how cheap they were. “” He said.

In addition to pre-cooking toppings, make sure your sauce, cheese, olive oil, and any toppings are next to your grill. You’ll also need a ladle or large spoon (for the sauce), a batter or frying brush (for the oil), and a really large spatula (or pizza scoop) and tongs. I also like to put a small bowl of cornmeal on the bottom of the pizza for dusting.

Once you’ve got everything set up, you can work quickly and effectively, but if you’re still a little exhausted, take a page off Deb Perelman’s blog and take them off the grill after the first side is browned:

One of the most common things I’ve read about grilling pizza, and what I didn’t like most in the past, is that you have to be hyper-organized and ready to work quickly. I do not agree; Then I grill the first side if I don’t have enough space to spread it outside, put it back in, cover all the pizzas at a normal pace – set the table, toss the salad, etc. – and let it finish grilling when we are ready to eat.

Bought in the store is fine

You can make your own batter and sauce.Smitten kitchen has excellent recipes for both – but there’s no shame in outsourcing it, especially when you get the hang of it. I usually grab both at Trader Joe’s, but almost all major grocery stores sell fresh pizza dough (look for it in the freezer section if you can’t find it chilled).

Make the grill hot

One of the great things about baking pizza on grill racks is that you can get super high temperatures in a short amount of time and you are outside so you don’t have to blow your home with the heat from your oven. A grill that is too cold will make a doughy pizza and nobody wants that, so turn it up. You should set up two heat zones – direct and indirect – with a pile of hot, glowing coals on one side of the grill (or have the burners turned up on one side if you are using gas).

You will be using the direct side to quickly sear both sides of the batter, which will start the cooking process, encourage some bubbles to form, and get some charcoal on the outside. (You don’t want all of the crust to bubble, but you can prick the center of the pizza beforehand with a fork, or just prick the bubbles as they form.)

To prepare grilled pizzas you will need:

  • Pizza Dough (1 1-pound ball per pizza)
  • Pizza Sauce (5 ounces per pizza)
  • Cheese (I just like grated mozz, but check out our other suggestions Here.)
  • Toppings of your choice (my favorites are grilled pineapple, uncooked prosciutto, air fryer roasted garlic, and hot Italian sausage.)
  • Flour for rolling or stretching dough
  • Cornmeal for dusting (optional)

About half an hour before grilling, take the dough out of the refrigerator and place on a surface dusted with flour. I use a large upside-down baking sheet because it’s easy to carry outside and I can slide the batter right off the sheet straight onto the grill. (You can also use a pizza scoop or lipless baking sheet.)

If you’re using a charcoal grill, fill your chimney and get it going. Once the coals are partially ashed, place them on one side of the grill, place the grill rack on top, and open the top and bottom vents fully and fully. A temperature of around 500 ° C is ideal and 450 ° C is fine, but keep in mind that when baking pizzas, the temperature will go down, so start with the higher side. If you’re using a gas grill, set your burners accordingly. (Use an external thermometer to monitor temperature no matter what type of grill you’re using.)

Stretch out your dough into a 10-12 inch circular shape and don’t worry if that shape isn’t perfectly round. My pizzas are usually in the shape of kidneys or the state of Alabama and that’s part of their charm. (Having a pizza pusher would likely help maintain the shape during the transfer, but I haven’t bought one yet for reasons unknown.)

Brush one side of the dough with a thin layer of olive oil, then slide the dough (oiled side down) onto the wire racks over the coals (or flames) and turn. Leave the grill open and let it cook for about a minute until it starts bubbling and you smell a little scorching (which is good). While it’s cooking, brush the top (which will soon become the bottom) with olive oil and dust with cornmeal.

After about a minute (at most) turn the dough over and pour the top with a single ladle of dough (more makes the pizza mushy), sprinkle the cheese and the rest of your toppings over it, then slide the whole thing over to the indirect heating side (the side without Coals), close the lid and let it cook for about five minutes, until the cheese is completely melted. (You can check it out after a few minutes if you’re nervous, but your nose is your most reliable tool – if it smells like it’s burning, it probably is.)

If you want a little more charcoal on the bottom of your crust, just slide it back over the coals for another minute. If you want the cheese to turn a little brownish – which the grill doesn’t do so well – beat it with a kitchen lamp. (You could use your broiler too, but that would bring some warmth in, which you sure don’t want, at least not now.)

Bitcoin mining issue is falling after the hashrate collapse in China

It just got a lot easier and more profitable to mine for Bitcoin.

The world has known for months that more than half of the world’s bitcoin miners would go dark if China cracked down on mining. Now that it has happened, the Bitcoin algorithm has adjusted accordingly to ensure miners’ productivity doesn’t drop any further from a cliff.

This adjustment – which went into effect early Saturday morning – also means more money will be available to the bitcoin miners who stay online.

“This will be a source of income for miners,” said bitcoin mining engineer Brandon Arvanaghi.

“They suddenly have a significantly larger piece of the pie, which means they are making more Bitcoin every day.”

Mining made easy

A bitcoin miner runs a program on a computer to try to solve a puzzle before someone else does. The solution to this puzzle completes a block, a process that both creates new bitcoins and updates the digital ledger to keep track of all bitcoin transactions.

China has long been the epicenter of bitcoin miners, with previous estimates suggesting 65 to 75% of the world’s bitcoin mining took place there, but government-led crackdown has effectively banned the country’s crypto miners.

For the first time in the history of the Bitcoin network, we have completely stopped mining in a specific geographic region that affected more than 50% of the network, “said Darin Feinstein, Founder of Blockcap and Core Scientific.

More than 50% of the hashrate – the collective computing power of miners worldwide – has fallen off the network since its market high in May.

Fewer people mining means fewer blocks are being solved every day. It usually takes around 10 minutes to complete a block, but Feinstein told CNBC that the Bitcoin network has slowed to 14 to 19-minute block times.

Precisely for this reason, Bitcoin recalibrates and resets every 2016 blocks or roughly every two weeks about how difficult it is for miners to mine. On Saturday, the Bitcoin code automatically made mining easier by about 28% – a historically unprecedented decline for the network – and thus set the block times back to the optimal 10-minute window.

According to Mike Colyer, CEO of digital currency company Foundry, the Bitcoin algorithm is programmed to deal with an increase or decrease in mining machines. “It’s a self-regulating market that doesn’t need an outside committee to determine what to do. This is a very strong concept, ”he said.

Fewer competitors and fewer difficulties mean that any miner with a machine connected will see a significant increase in profitability and more predictable revenue.

“All bitcoin miners have the same economics and mine on the same network, so both public and private miners will see revenue growth,” said Kevin Zhang, former chief mining officer at Greenridge Generation, the first major US power plant to begin with mining on a grand scale behind the counter.

Assuming a fixed cost of electricity, Zhang estimates sales of $ 29 per day for those using the latest generation Bitmain miner, up from $ 22 per day before the change. Longer-term, although mining income can fluctuate with the price of the coin, Zhang also noted that mining revenues were only 17% lower from the Bitcoin price high in April, while the price of the coin was down about 50%.

“We anticipate a time of much higher mining profitability for Compass Mining customers,” said Whit Gibbs, CEO and founder of Compass, a bitcoin mining service provider. “We assume miners are about 35% more profitable.”

Blockcap’s Feinstein agrees. “We expect an increase in sales and profits for the foreseeable future. This was an unexpected gift to the network, not only in terms of revenue, but also in terms of decentralization and sustainable energy metrics.”

Although the difficulty reduction benefits all miners, those who use new generation equipment benefit the most.

Feinstein tells CNBC that most of the devices in China that got shut down were old generation devices that are inefficient and run on much lower profit margins.

Six month increase

It is difficult to predict how long the hashrate deficit will last. Barbour said it was entirely possible that Beijing could simply reverse its policies and this could only be a short-term hiatus.

If not, most mining crypto experts agree that it will take anywhere from six to 15 months for all of the idle and displaced mining hardware to migrate. “It will be a long time before the surplus finds a home,” said Barbour.

Gibbs believes the miners should generate higher revenues for at least the remainder of 2021.

“Every day, the Chinese miners around the world look for places where they can turn their machines on again. Space is very limited right now, ”said Colyer.

Part of the problem, according to Feinstein, is that even before mining stopped in China, there was a lack of infrastructure to accommodate the new-generation miners deployed monthly by Beijing-based manufacturer Bitmain.

Now that the market is inundated with an oversupply of used mining rigs, it’s hard to say how quickly countries can absorb the influx of equipment.

“Some mining companies built everything and were just waiting for these ASICs to plug in, which would only take a few days,” explained Arvanaghi.

“Others may need to build containers, expand warehouses, or increase their electricity capacity. We won’t see the hash rate hit what it used to be overnight, but we’ll see it rise again over the next few months, ”he continued.

Of all the possible destinations for this gear, the U.S. appears particularly well positioned to absorb this stray hashrate. CNBC is told that major U.S. mining operators are already signing contracts to patrol some of these homeless Bitmain miners.

Bitcoin mining in the US is booming and venture capital is flowing so they are ready to take advantage of miner migration, Arvanaghi told CNBC.

“Many US bitcoin miners who were funded when the price of bitcoin began to rise in November and December 2020 meant they were expanding their power capacity when the Chinese mining ban went into effect,” he said. “It’s great timing.”

However, Barbour believes that much smaller players in the US residential areas also have a chance to catch these surplus miners.

“I think this is a signal that bitcoin mining will inevitably be more distributed in the future,” said Barbour. “Fewer mega mines like the 100 megawatts we see in Texas and more small mines in small commercial and ultimately residential areas. It’s much more difficult for a politician to close a mine in a garage. “
