The alternate headline for this post was “10 of the Best Simple (Lazy) Mother Meals”. But considering how every innuendo, even joke, triggers me that mothers are lazy – because, hello, the mental work we do in our sleep just to figure out how to get Child 1 to and from soccer while Children 2 and 3 have a piano, basketball, a huge hole in their sneakers, and a persistent breakdown from a “sore elbow” – we chose to do this instead. (Plus, fathers do a lot – see you! – and they deserve simple food ideas too.)
It’s sensible – not lazy – if we don’t have the bandwidth to create culinary masterpieces every damn night, don’t you think? So raise your hand if you are not a house god or goddess who plans meals in advance and always knows what to expect for dinner. Everyone who stares into the deep abyss of your refrigerator every evening at five and softly whispers “Fuck!” – we have you guys.
Here I am going to leave you 10 of the easiest and fastest healthy recipes I know (without eating hot dogs, DoorDash or just plain cheese, all of which I find acceptable too). And listen: this is not another Easy Weeknight Meals! Article on deconstructed pear chops. No ma’am, we know you better.
